I made your favourite cookies today and because I know you will be peeking here before you leave work, now you can drool on the drive home :) According to Chloe, I am always baking cookies (am I?) And, because Chloe is nosey ( I mean interested:), I posted a photo and the recipe for you.

Jumbo Raisin Cookies

2 cups raisins (boil with 1 cup of water for about 5 minutes and set aside to cool)

Cream:
1 cup margarine, butter or shortening
2 cups white sugar
3 eggs
1 tsp. vanilla
Add cooled raisins (juice and all)

Sift Together:
4 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 ½ tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. Allspice

Add the above dry ingredients to the raisin mixture. Mix well with a spoon.
Bake at 375 degrees C for about 12 minutes.

    Tee;
    Three cheers for no diets!

    Scholiast;
    Try one...

    Eric;
    Well, very soft food porn because I really only bake and make creamy soups...

    DayByDay;
    Given up sugar? I wouldn't live.

    MissB and Chloe;
    A bake-off!! I would like photos and quotes from those who eat them and then I will judge the winner...

    SkyeBlue;
    Would you like to enter the raisin cookie bake-off?

    Angel;
    Diet schmiet :)

    Raisin cookies are the best!

    Yum, I'm going to buy some allspice and make some this weekend.

    How lovely! Those really look like the cookies I usually buy, except they usually have chocolate chips. Whenever I bake cookies something weird and ugly comes out of the oven...

  1. Blogger Cathy said:

    Michelle;
    Let me know how they turn out (but I am allergic to walnuts if I ever drop by :)

    Madelyn;
    I am a purist; nothing but the raisins for me :)

    Stephanie;
    Tied with chocolate chip.

    Skyeblue;
    Did you bake them yet?...

    RiskyBiz;
    You will not regret it; just don't over-bake them...

    Devil Mood;
    These are fool-proof. I make them all the time.

    Connie;
    They are going, going, soon to be gone...

    Mmmmmm, they look scrumptious.

    This is the second cookie recipe I blatantly stole from you blog... I mean, the second recipe you shared on the blog. So I think Chloe's right. But that doesn't mean you can stop...

    Oh, these look SO good. I adore raisin cookies. But...the rest of the family won't touch raisins (where did I go wrong?) so if I made a batch, I'd have to eat them all myself. Raisins have fibre, right? :-)
